HAZELNUT & HONEY CAKE

Ingredients

200g butter
130g Red Gum honey
240g caster sugar
8 eggs
120g plain flour
A pinch of salt
1 tablespoon baking powder
120g ground hazelnuts


Method


In a pan, melt the butter and honey and let it cool down.
In a mixing bowl, mix the sugar and the eggs then add the butter and honey and finally the dry ingredients.
Pour the cake mixture into a 28cm diameter tin and cook at 180┬░C for about 45-50 minutes or until an inserted skewer comes out clean.
Drizzle with extra honey and decorate with whole hazelnuts or alternatively spread with cream cheese frosting.
